What is CAT 5e?
CAT 5e has superceeded CAT 5 and become the standard for new installations.
The main improvement over CAT 5 is CAT 5e's capability to run network traffic at a speed of one Gigabit, compared to CAT 5's maximum of 155Mbs ATM

What is CAT 6?
CAT 6 is a step up from CAT 5e in both performance & price. Physically CAT 6 differs from CAT 5e by having an internal "former" which separates the pairs of cables and helps prevent "kinking" of the cable during installation, the downside of this is that the cable itself has a larger radius and therefore takes up more room within compartment trunking or conduit, this in turn reduces the amount of outlets that can be housed within such containment.
CAT6 cable contains four pairs of copper wire and unlike CAT5, utilizes all four pairs. CAT6 supports Gigabit (1000 Mbps) Ethernet and supports communications at more than twice the speed of CAT5e, making category 6 a good choice for "future proof" premises cabling.
